An aperitivo in Udine
The aperitif is a sacred ritual in Udine: especially at weekends
Besides the inevitable "tajut" (glass of wine) in recent years the spritz has established itself in all of its variants.
From plain water and wine (which has always been known as spritz), ever-increasing complexity peaks can be achieved, by adding vermouth and brightly coloured spirits with strong flavours.
A curiosity: the Austrians introduced the spritz between the 18th and 19th centuries in order to acquire a taste for the wines from Friuli and Veneto, which had too much alcohol for their taste, being used to beer, and leading them to dilute the wine with water in the local hostelries.
From there, were a succession of processes and inventions.
